So, I missed Monday Minute, which means I am going to give you all an update on what’s exciting around here today! I’ll combine it with “What’s on the Menu Wednesday” although I don’t have a ton of great food ideas this week.
Life has been hectic lately, which I am ok with, but I haven’t had any time to sit down and write! We are selling our house, which is a little bittersweet, but I am SO excited to move on to our next adventure. Between house showings, little outings since it’s getting nicer around here, and me feeling a little under the weather, life is crazy! I wouldn’t have it any other way (besides being sick maybe!).
What’s on the Menu Wednesday
Well, I’m a little disappointed in myself with dinner prep this week. We started out the week great with dinner at my Mom’s Sunday, where she made delicious beef tenderloin with asparagus and mushrooms, plus my favorite pasta salad on the side.
It’s just spiral tri-color macaroni plus some spinach ravioli, small pieces of sharp cheese, olives, tomatoes, peppers, and balsamic dressing. It is so delicious and perfect for a summer night or as a side at a picnic.
From Sunday, dinners went downhill so far. We have had to show our house the past two nights so we picked up some food out, and fed the kids before we left the house. They have been great changing up routine a bit, and James loved having his bath before dinner last night! Some things I love to “grab” when we’re out include Panera and Moe’s. I’m a sucker for broccoli cheddar soup, and always love me some Mexican food ;).
I did want to share one of my favorite easy weeknight meals that we had last week.
Pulled Pork Wraps/Quesadillas
This has become a staple in our house, and can be made a variety of different ways! I always start by slow cooking a pork roast for the day with about 1/2 cup of soy sauce, garlic powder and some fresh garlic, whatever ground herbs and spices I feel like throwing in, and sometimes some root beer for some sweetness.
This week, we had spinach wraps in the fridge so we made pulled pork quesadillas with some Monterey jack cheese. I love throwing in some sautéed mushrooms, onions and peppers in there too! These are seriously delicious.
On the side, I use fresh chunky spicy salsa, plain greek yogurt and avocado.
Avocado has become a favorite by all in our house lately too. Ella has always loved it, and James has started to like it again too. I’ve started making him an avocado/yogurt mix, sometimes with a little juice added if it’s too thick. I just put those ingredients in my Magic Bullet and it comes out a smooth, delicious “treat”! James thinks it’s just yogurt, and Ella loves whatever I feed her. I usually use Stonyfield organic baby yogurt with whole milk. Yum!
What’s New with Two Under Two
I can’t believe that Ella will be 8 months old next week! My two under two are growing quickly and changing in so many ways. One of the reasons I haven’t had time to write is because we have been out and about every day. It’s so much easier to make plans once their schedules become more predictable.
Some examples of our outings include going to the library as always (we ventured out to a new library last week to meet some cute llamas!), going for a hike (Ella slept in the carrier which was amazing), getting ice-cream, taking walks, going to the park, and today we’re going to a museum to play with some baby animals.
I’ve said it before and I’ll say it again – I love having summer babies! By the time the next summer comes around, they are old enough to enjoy it and be a little more independent. This little girl is becoming mobile before my eyes! She can crawl backwards and roll across the room. She’s also learned how to sit up in the past few days.

What’s New with Mama?
When I do get a few minutes to myself, I usually shower. Hah. But other times when I get more than a few minutes, I like to return to my favorite books to get some inspiration. Lately I have been loving reading about other countries and their parenting styles, and I’ve mentioned one of my favorite books here before – Bringing up Bebe by Pamela Druckerman.
Here’s an interesting excerpt:
Some food for thought for working moms out there. Not sure if you can read it, but the last paragraph discusses the reasons “Frenchwomen seem calmer than American women.” They get more vacation days, a lot better maternity leave, highly qualified “creches” or daycares funded by the government and very respected by all, plus support for women to work and to take care of themselves. They seem to have a great balance of work, being a mom, and taking time for themselves too. Maybe we could learn a little bit from these women?! Honestly though, due to our maternity leave and lack of affordable (and sometimes quality) childcare, I think we have a long way to go. I give working moms a lot of credit, and honestly couldn’t do it myself. I tried! Maybe when the kids are older… 😉 For now I am enjoying my time home and trying to soak up every minute.
With my birthday coming up, I have myself thinking this:
Seriously, story of my life! I’m in bed by 9 most nights, and looking forward to Ella sleeping straight through the night. She’s getting there!
Well, I have to get back to my sometimes crazy, always exciting, right now very interesting and unpredictable life with two under two 😉
