Monday Minute

Happy Monday! It’s absolutely gorgeous here (a little hot, but I won’t dare complain) and we are enjoying the outdoors and soaking up the sun as much as we can lately. We had a very productive weekend packing and moving some things and threw in a little fun too by taking a trip to a local zoo.

Here’s what’s going on here this week!

1. Home

We’re in complete packing mode here and it feels so therapeutic to get rid of things! Yesterday we went through our closet and both Chris and I got rid of a ton of clothes. We brought two large garbage bags to a clothes drop off and it felt great. We are getting pods delivered to put boxes in throughout the week and then the truck will take them to the new house! We’ve never tried this, but it seems like the best option for us, and right now I feel pretty organized. 🙂

2. Food/Drink 

Since a ton of kitchen supplies are already packed up, we’ve been using the crock pot for a few dinners every week. I have to say I’m not too excited about any of the meals we have planned for this week but easy is key when you’re packing and moving with two little ones! We’ll probably end up ordering out towards the end of the week too. I cannot wait to enjoy some yummy grilled food once we move though. Grilling is one of my favorite parts of summer! Especially veggies and steak 🙂

I ran out to the store to buy some bins and the essentials for this week last night when the kids were in bed! On weekends they tend to get to sleep later because we are out and about, so I didn’t make it home until after 9pm. I did stop for some delicious soft serve ice-cream on the way home! We deserved it after all the work we did this weekend. Plus, isn’t that what summer is all about?!

It’s so important to stay hydrated in the hot weather, and since I’m not a huge fan of plain water, I drink seltzer all day long! Polar Seltzer has some amazing flavors this time of year, including my favorite, Watermelon Margarita! It’s delicious.

3. Exercise

I’ve really been into HIIT workouts and Tabata recently at the gym, so I thought I’d share some with you today that you can do right in your living room! The key to these workouts is that they are short, but intense interval workouts that improve cardiovascular endurance while speeding up metabolism. I love it and you will too!

4. Fun 

James had the best time at the zoo yesterday with his cousin! He was a little overwhelmed with the size of this giraffe but thought they were so cool from a distance.

We took a “safari ride” and got to meet some ostriches, zebras, bison, camels, and more!

Unfortunately, James had woken up extremely early and we were there past his nap time so he became cranky quick. All he wanted to do was run and luckily the zoo was pretty safe and kid friendly, so he did!

He actually enjoyed a lot of the fake animals as much as the real ones! He loved looking at the birds, goats, bears, and prairie dogs.

I can’t wait to visit again, and we’re so lucky that we live pretty close to such an amazing animal-filled place!

We left Ella with Nonnie since it was hot, and we thought she’d enjoy some alone time with her.

Ella and I also had a little date Saturday night attending a friend’s party!

Although I love watching my two under two interact, it’s nice to give each of them a little one on one time sometimes. This little lady had so much fun getting all the attention, dressing up, and eating some yummy food, including a new favorite, celery with humus!

Well, that got long fast but we have a lot going on right now to share! Wish me luck packing and getting things moved this week, and I hope you all enjoy this beautiful weather!
