What’s on the Menu Wednesday – How to Stay on Track with Meal Planning

I’m happy to report that we’ve gotten back into clean eating in the past two weeks, now that the craziness of house hunting is done. It feels so good to eat well, and the results are incredible if you stick to a plan. Here are my top 3 tips on living a healthy lifestyle:

  1. Pair eating healthy with working out. For me, the two just go together. If I’m eating well, I have energy and motivation to work out. If I’m seeing physical results, I’m more likely to resist my cravings and eat healthy!
  2. Meal plan weekly and cook your own food! It never fails; if I don’t plan out our meals and have healthy food in the house, we end up ordering out. If I buy healthy and somewhat more expensive food, I cook it and eat it! Simple.
  3. Give yourself a break. This is not a diet. This is a lifestyle. If you cut out the foods that make you happy (like the ice-cream I’m eating right now) you will right back into bad habits. It’s all about moderation and never starving yourself.

Spicy Chipotle Salmon with Garlic Zoodles! 

This week we are getting back into the swing of healthy eating, a few recipes at a time!

Monday night I made shells with peas and butter, a toddler favorite and comfort food for sure.

Tuesday I made Spicy Chipotle Salmon with Garlic Zoodles, “recipe” below!

Tonight we are having healthy pulled pork wraps. You can find the recipe here.

Tomorrow night we are having my “birthday dinner” at my in-laws and my mother-in-law is making eggplant parm! Can’t wait 😉

Monday Minute

Happy Monday! ^ That’s what we’ve been up to!! ^ It’s been tough to write recently with everything going on, but I’ve really missed my little corner of the Internet, so I’m going to make a conscious effort to put more time into my blog. Now that the weather is changing (very slowly 😉 ) we have been out and about more and James is loving it. In the past few weeks we’ve gone on hikes, played outside a lot, visited farms and played with baby animals, and spent lots of time with Nonnie (my mom) who is home from work after her hip surgery. What’s New Wednesday

So, I missed Monday Minute, which means I am going to give you all an update on what’s exciting around here today! I’ll combine it with “What’s on the Menu Wednesday” although I don’t have a ton of great food ideas this week.

Life has been hectic lately, which I am ok with, but I haven’t had any time to sit down and write! We are selling our house, which is a little bittersweet, but I am SO excited to move on to our next adventure. Between house showings, little outings since it’s getting nicer around here, and me feeling a little under the weather, life is crazy! I wouldn’t have it any other way (besides being sick maybe!).

What’s On The Menu Wednesday

Happy Wednesday! (Which means the week is halfway over!). I can’t believe that it’s April already. This is a jam-packed month, which I don’t mind, and my little girl turns 7 months tomorrow! Time is flying!

I haven’t posted about food in a little while because, to be honest, I’ve felt a little uninspired. Two Under Two Update!

Good Morning! I feel like I haven’t exactly “had my ducks in a row” lately! Funny because James has been slowly changing his obsession with horses to an obsession with ducks! So fitting for Easter coming up :). I can’t wait to get this kid to a petting zoo soon!

We have all been sick for the last week, I am SO over this lack of spring weather, and I just feel blah. Not to mention I haven’t had much time to exercise while wiping noses and cleaning everything with these babies lately. That’s ok, I’m confident that we’re on the mend and almost out of this slump. The great thing is that I am home and don’t have to worry about taking time off work for sick kids, etc. and if we want to hang in our pajamas all day we can!

Monday Minute

I don’t know about you, but when I have a particularly busy weekend I feel so unorganized when Monday morning comes! Usually I would feel exhausted and sad that the weekend was over, but today I am choosing to embrace the mess, enjoy my babies, and be thankful to be home after a busy few days.

This weekend was great. Saturday, I got to see the new Beauty and the Beast movie with my mom and relive my childhood! I also made a trip to Trader Joe’s with James, which I absolutely love but don’t get to often, and we took a nice long walk as a family. Saturday night Chris and I ordered Mexican. It was the perfect family day!

Sunday was very different than usual and so refreshing. Chris got up with both babies and I got to sleep in a bit. Then we had an appointment to get our taxes done, and at first we thought about bringing both kids. Then Chris’ parents offered to babysit James because they had been wanting to take him for a while, and we agreed it would be the perfect opportunity! My mom then offered to watch Ella and all of a sudden it became a kid-free day! I can’t believe we actually had a day together without the kids. It is the first time that this has ever happened, and I must say it was very refreshing.

Meal Planning 101

Hey everyone! I just wanted to share how meal planning has seriously changed my family’s life recently, and I hope it can change yours too. Meal planning is simply planning out your meals (I do it every Sunday for the week) and prepping some items for easy access throughout the week.

Being a mom to two small children has taught me how to multitask to the fullest and meal planning has helped me keep my nutrition on track, as well as my family’s. It’s easy to grab an unhealthy snack or swing through the drive-through when things get crazy with the kids, but if I have pre-portioned snacks and meals already made, I can simply grab them instead.

You have to take care of yourself as a mommy before you can expect to be a good mommy to those little ones! I’ve really tried to get my nutrition back on track recently, and it feels so good to eat healthy and exercise.
