Turkey Chili

This is by far the best turkey chili recipe I have ever tried! I don’t exactly know where it came from, but I think it’s one of those wonderful recipes that has been handed down through a bunch of women in my family for years. It’s not a fancy or complicated recipe, and it’s so family friendly. My mom always used it and perfected it to her liking, then gave me the recipe for my bridal shower in a huge cookbook she put together for me. For the full recipe, click here!

Baked Haddock 

One of our favorite family meals is baked haddock. It’s not the healthiest recipe, but it’s definitely not the worst either, and my toddler will eat it so that’s a win for me! Here it is:

Depending on how much you are making, you will need to adjust the breadcrumb measurement!

1 pound of haddock

1 cup of plain or Italian breadcrumbs

1 tbsp butter

Mayonnaise

Spray a pan with olive oil cooking spray and pre-heat oven to 375 degrees. Rinse and dry haddock filets. Lightly spread mayo on each side of each haddock filet, then dip in breadcrumbs on both sides as well. Place in pan and bake for 25 minutes. That’s it!

A side that we are really loving lately is cauliflower rice. I’ve made it myself, but it’s so much easier to buy it already riced in the refrigerator or frozen section of the grocery store. This one is our favorite!

I also made Annie’s mac and cheese for James. It’s definitely his favorite and he loves all of the varieties :).

Pulled Pork Lettuce Wraps 

 

These lettuce wraps are SO easy! You can literally use any protein you have also. I threw a pork roast in the crock pot for the day with some root beer and garlic to start. When it was dinnertime, I pulled the pork, used iceberg lettuce to hold the pork, and topped the wraps with avocado, salsa, and non-fat plain greek yogurt (in place of sour cream). Couldn’t be easier, right?! These will be a weekly meal in our house I think!

 

 

 

 

 

 

Since joining Beachbody a few months ago and deciding to change my eating habits (since I’m not preggo anymore ;)) I have really enjoyed trying out new recipes, and cooking things that are quick and easy also. It’s definitely difficult to cook a meal for the family every night when I am alone with two babies, and I am SO grateful that Chris often helps out in the kitchen (he’s definitely a better cook than me!). See below for some of our favorites.

Last night, we had a simple yet extremely healthy meal: Beef tenderloin lightly seasoned and cooked on the stove in some olive oil, baked sweet potatoes, onions and apples with a little butter, steamed asparagus, and sautéed mushrooms, onions, and peppers. I literally don’t even need to post a recipe for any of these things because even I can make this meal! To keep things healthy, use small amounts of butter, olive oil, and little to no salt. The prep for this meal could take about an hour, but Chris helped with the kids and I got things done a little at a time so I could quickly prepare it when we were ready (baking the sweet potatoes ahead of time, etc.)

Unfortunately, James did not enjoy this meal, but he is not a fan of any veggie or meat lately, and that’s basically what it included! He picked on a few things, ate some sweet potatoes, and I whipped up some Annie’s Mac and Cheese for the majority of his meal. He had blueberries and strawberries for dessert. I’ve come to the realization that he wont be eating many of our meals these days, and that’s ok! As long as he tries it, eats a part of it, and sits with us at dinner, that’s all that matters 🙂 Happy healthy eating everyone!

Turkey Meat Sauce, yum! This recipe is made with whole wheat spaghetti, any marinara and basil sauce of your choice, and lean ground turkey. How simple and delicious?!
